Cucumber, Tomato and Avocado Salad
Cucumber, Tomato and Avocado Salad is a bright, colorful salad that takes less than 10 minutes to make and tastes fresh and delicious. Filled with a diced seedless cucumber, chopped sweet grape tomatoes, a minced sweet orange pepper, chopped Haas avocado, cilantro, and a dash of Pink Himalayan salt, this salad goes with nearly any main dish. The Cucumber, Tomato, and Avocado Salad is light and refreshing with ingredients that are readily available this time of year. When time is limited, this is a great salad to pull together in minutes.
1 large seedless cucumber, skin removed and diced into small pieces
1 pint of sweet red grape tomatoes, chopped into quarters
1 mini sweet orange pepper, chopped into small pieces
1 Haas avocado, cut into small pieces
1/4 cup of fresh cilantro leaves, chopped
Dash of Pink Himalayan salt (available at Trader Joe’s, Whole Foods, Fresh Market and most grocery stores)
Combine all of the ingredients, add a dash of Pink Himalayan salt and serve immediately. If the salad needs to be made ahead, reserve cutting the avocado until just before serving. Serves 4-6 people.
For a delicious variation, add 2 tablespoons of a fruit flavored vinegar (i.e. blood orange or red pepper) by Mangé which can be purchased at www.mange-leganstronome.com. Mangé fresh fruit vinegars are smooth and velvety and add great flavor to salads and also keep the avocado from discoloring.
