Quinoa, Black Bean and Avocado Salad

On a sunny Spring afternoon, I came home to find a bowl of Quinoa, Black Bean and Avocado Salad on the countertop. My daughter, a devout vegan decided to create one of her favorite lunch dishes with quinoa – a grain like seed that contains high quantities of the B vitamins, calcium, phosphorus, iron, magnesium, zinc and lysine (an amino acid) – vegetables (California avocado, sweet red peppers), fruit (sweet grape tomatoes, lime juice), legumes (black beans), herbs and spices (cilantro, cumin, salt and pepper), and a small amount of olive oil. Jade Pearl Rice Pudding

Rice pudding is one of those old-fashioned desserts that can always be made in a pinch because most people have rice, sugar, vanilla, and milk on hand. A creamy and delicious comfort food, rice pudding is easy to make and can be dressed up with berries, nuts, or plump juicy raisins. Wild Garden Hummus Dip

This post should be dedicated to United Airlines who is responsible for me learning about Wild Garden Hummus Dip. On a recent flight, I ordered the “Tapas” snack box which had a variety of snacks but most importantly Wild Garden Hummus Dip. Before opening the single serve packet of hummus, I read the ingredient list and was impressed because the dip contains chick peas, sesame paste (tahini), water, sea salt, natural spices, and citric acid. And, then I tasted the hummus dip and found it delicious – no overwhelming garlic flavor (because there is no garlic) and not too salty – with a smooth creamy texture that was easily spread on chips or crackers. Chick PZ

Forbidden Rice

While dining at the Veritable Quandary in Portland, Oregon last month, Wild Grilled Salmon over Forbidden Rice was served for dinner and I couldn’t decide which was better – the medium rare grilled salmon or the dark moist flavorful rice that was underneath the fish. Rice is normally a bland food that requires butter, salt, or spices to enhance the flavor but Forbidden Rice is different.  A delicious rice with a a nutty taste , Forbidden Rice looks like a black rice but is in reality, a deep dark purple color when cooked and although the expectation is for the rice to be hard and nutty like a wild rice, Forbidden Rice is soft and nutty. Folklore has it this rice was reserved for the emperors of China and therefore forbidden to all others; hence its name.

Fregula

Fregula is a type of pasta from Sardinia that resembles toasted pearls. Some people think fregula is like couscous but this unique pasta is bigger, thicker, and more flavorful than couscous. Fregula or the “pearl of pastas” is made with coarse semolina flour blended with water and formed into little balls. The pasta is then dried and toasted to impart a nutty flavor when cooked. Sweet Potato and Black Bean Burritos

If you and your family like sweet potatoes, then Sweet Potato and Black Bean Burritos will become a family favorite….even if there are no vegetarians or vegans in your home. The overwhelming flavor of this dish lies with the sweet potatoes but the addition of the black beans, cilantro, onions and spices give the burritos a heartier flavor. Add the toppings…well, they’re the icing on the cake. Very simple to make, the potato and black bean filling can be prepared ahead of time then refrigerated until thirty minutes before dinnertime. Purcell Mountain Farms Lentils

For many years, the extent of my relationship with lentils was limited to lentil soup which never seemed to have as much flavor as a  bean and vegetable soup and was certainly not as appetizing to look at. Then, while shopping in a small grocery store, I noticed bags of multi-colored lentils which intrigued me as I always thought lentils were limited to either the little French dark green puy variety or the big hearty American version. Palouse Brand Green Split Peas

Grown, harvested, and packaged in the USA, Palouse Brand Split Peas are without a doubt the most flavorful split peas I have ever tasted.
