Holiday Spinach Salad

Spinach Salad takes on a new twist this holiday season with the addition of fresh, organic roasted red beets. The dark green spinach leaves tossed with a light mustard maple salad dressing and then sprinkled with dark red beets, light green avocado pieces, lightly toasted pecan halves, and roasted pumpkin seeds makes for a nutritious and delicious lunch or dinner salad.

How to Turn a Can of Soup Into a Healthier Meal in 10 Minutes

There are days when we just don’t have 30 minutes to make lunch or dinner and, yet we still want something healthy and delicious. Why The Big Picture Matters

Several years ago I started making donations to sanctuaries specializing in the rescue of animals from slaughter houses and abused “homes.”  The stories were heartbreaking and I knew my dollars were primarily going to the veterinary care of the animals, food, shelter, and the selfless staff devoted to taking care of these animals.

When a cow escapes from a slaughter house in Brooklyn, I cheer for the cow (and curse the people chasing the petrified animal) and often send a donation to the kind person who rescued the terrified animal.  So, before I go further, I want to unequivocally say these charities deserve our support because they spotlight the abuse and horrific way people treat most animals. When we shop for nuts, we often choose between raw or roasted and salt or unsalted. But there’s another option to consider:  sprouted.  A sprouted nut is simply a nut that has been soaked in water (which releases the nut’s enzyme inhibitors so that our bodies can absorb the nut’s nutrients more effectively). The nuts are then dried slowly at low temperatures (to preserve the nutrients and enzymes) resulting in a light, crunchy edible nut.  It really is that simple. Read more »

The Protein Craze
