Polenta with Roasted Vegetables

Farmer’s Markets are brimming with the harvest of summer vegetables: zucchini, squash, onions, tomatoes, green beans, cabbage, carrots, beets, and more. With temperatures warming up, a dinner plate of fresh roasted vegetables with polenta is the perfect summer feast.

Choose 4 or 5 vegetables and grab a cast iron pan, and you’ll have the makings of a deeply satisfying meal. Fresh polenta is the perfect accompaniment to roasted vegetables but if your tastes run more towards rice, quinoa, couscous or pasta, that works, too. Read more »

Thin Stackers

Thin Stackers are light and crunchy thin rice cakes made out of organic ingredients – brown rice, quinoa, millet, flax seed, popcorn, and red rice – that scream flavor in every bite. It’s not any rice cake that can make this claim because most rice cakes have little or no flavor. But, not Thin Stackers: gluten-free puffed grain cakes whose unusual shape (a square) make for multiple uses. Read more »

Anson Mills Stone Cut Oats

Behold the phenomenon of real fresh oats.

Agricultural products depend on soil, seed, farming practices, preparation and enjoying the final product so it goes beyond saying that not all oats are created equal. In fact, it’s more accurate to say that oats – like many other products (think grocery store tomatoes versus Farmhouse tomatoes) – vary tremendously in flavor and it’s not because some are instant, flakes, or steel-cut but rather if the oat has been bred for flavor (as opposed to yield, visual appeal, shelf life, disease resistance, or transport) and grown in soil that uses crop rotation to maximize the nutrients and thus the flavor of the oat. Healthy, nutrient rich soil makes great tasting food. Read more »

Green Pea Guacamole

I always love a side of guacamole with everything.                                                                 ~Erin Heatherton

Rich, creamy guacamole made from a perfectly ripe avocado is the perfect topping for a veggie burger or toast, as a sandwich spread, or as a dip with tortilla chips or crackers. But if you want to ramp up the nutrition without compromising on flavor, consider making Green Pea Guacamole – an equally rich, thick, and flavorful side dish that is made with both avocado and fresh green peas. Frontier Bites

Frontier Bites were created several years ago when two brothers (Nate and Matt) challenged each other to a baking competition to see who could come up with the best alternative to the overly processed energy bars that they regularly ate. The rules were simple:  no refined sugar, no dairy, no gluten, no soy and no more than 10 ingredients that could be found in the pantry. Read more »

How to Spice Up Salad, Rice, and Baked Potatoes

At some point we all get into a rut when it comes to making a side dish, whether it’s the dinner salad, rice, or a baked potato.  Let’s start with the salad. Lettuce greens, tomatoes, cucumbers, carrots and scallions are placed in a bowl, tossed with dressing and voilá, the salad is ready. If we think ahead, maybe some homemade croutons make an appearance.

For rice, we generally chose water and when feeling adventurous, maybe broth (low sodium if we’re in a nutritious frame of mind). Baked potatoes present another challenge, especially for those on dairy-free diets because butter and sour cream are not options. So, what can we do with these three essential side dishes to generate a bit more excitement at the table? Read more »
