Powerballs

Powerballs are moist, nutty delicious bites made from eight ingredients: dates, walnuts, dried apricots, sprouted sunflower seeds, goji berries, hemp hearts, flaxseed meal and cinnamon. Baked Honey Crisp Apple Crumbles

It’s nearly impossible for me to walk by a pyramid of fresh apples in the grocery store especially if the apples are Honey Crisp – those sweet, tart, super crispy delicious apples that are also great for baking because they retain their shape and don’t turn to mush easily.

One of my favorite ways to enjoy a Honey Crisp Apple is to bake it with a nutty oat filling in the core. These baked apples really do taste like an Apple Crumble Pie but the healthier version. Chocolate Pecan Bars

Chocolate Pecan Bars are rich, moist, crunchy dark chocolate nutty bars that will remind you of a chocolate pecan pie (without the corn syrup) although my daughter says these gooey treats taste like cookie/candy bars. In fact, these bars were born of a “disastrous” mistake made when I added too many pecans to a chocolate pecan pie recipe with the idea that more is better. Read more »

Whole Grain Date Bars

Dates are often thought of as nature’s candy with the Medjool variety considered one of the finest there is. Large, sweet, and creamy, the Medjool is the perfect fruit to eat as is or in a recipe for Whole Grain Date Bars:  a crunchy applesauce-sweetened cinnamon oat crust covered in cooked dates and topped with more crunchy oat crumble. There is no added sugar in this recipe because the dates add enough sweetness to the bars.
