The LenkaBar

York, Pennsylvania may be well-known as “The White Rose City” but many people don’t know that York is also the home of Lenka’s Fresh Snacks, the maker of LenkaBars: granola bars made with organic granola and fresh, natural ingredients. It all started in Mom’s (Lenka’s) kitchen six years ago with her recipes for homemade granola bars that called for the freshest ingredients. Holy Crap!

When Corin Mullins couldn’t find a healthy great tasting breakfast cereal that addressed her husband’s food allergies and sensitivities, she created her own and called it Hapi Food cereal. At the local farmer’s market on the Sunshine Coast in British Columbia, Corin started selling her bagged cereal and when one of her first customer’s tasted a sample and said “Holy Crap…this is amazing,” the name of the cereal was changed to Holy Crap. That was May of 2009 and since then, the popularity of Holy Crap has skyrocketed  (literally, to the International Space Station where Canadian astronaut Chris Hadfield enjoyed it during his five month mission earlier this year). Purely Elizabeth Granola

This past week while grocery shopping, my vegan daughter convinced me to try a new brand of granola made by a company called Purely Elizabeth. She didn’t have to twist my arm even though we have at least a half-dozen bags of granola in our cereal cabinet, each one lovely in its own special way.

In our house, granola has a special importance and is given the status of both diamonds and water. Valued for its clarity in ingredients and adaptability (almost everything tastes better with granola just as diamonds look great with nearly anything), granola is the one food that tastes heavenly in its many variations and is a source of sustenance, just like water. Dorset Cereals

BAKED Granola

There are more than a hundred types of granola on the market and although I’ve never tasted a granola I didn’t like, there are only about a half-dozen that I can say I truly love:  BAKED Granola is one of them. Made by a bakery called BAKED in Brooklyn, New York, BAKED Granola is the go-to granola when I want a wholesome cereal made with all natural oats, grains, lots (and lots) of nuts and a hint of cinnamon (the House Blend). Delicious with milk but downright decadent on top of yogurt, BAKED Granola is a truly nutty, crunchy, delicious treat.

10 Foods to Pack for an Easy and Healthy Lunch (or Snack)

Packing a healthy lunch for yourself or a child can be challenging at times because it’s hard to provide variety, taste, and wholesomeness day after day. One of the most important tips a friend gave me about packing a lunch is to purchase a lunch or meal transport system that is flexible and made to carry a variety of foods. Laptop lunches (www.laptoplunches.com) or Black and Blum (www.black-blum.com) are two companies that make top-notch lunch boxes and food transport pieces. In addition, I always keep a stock of “jello shot glasses” – small 2 ounce plastic containers (125 for about $10 through www.amazon.com) with a plastic lid that snaps on and stays on.
