The Ultimate Brownie Spatula

Getting brownies out of the pan intact has always been difficult for me. First I cut the brownies in the pan with a knife and then try to maneuver a spatula under the brownie which invariably results in crumbled pieces in the pan or broken brownies.

The brownies still taste great but they just don’t look as delicious on the plate. For years, I’ve searched for the right spatula but most are just too big (12 inches long or more) for the job until I discovered the Fox Run Cookie Brownie Spatula:  a 7 inch by 2.25 inch stainless steel spatula with a wood handle that makes cutting and serving brownies a breeze. Things I Do When He’s Away……

When my husband travels, I used to feel like a fish out of water unsure of what to do without my best friend around but gradually through the years, I’ve learned to embrace this time and do a few things differently.

Let’s start with baking. I only bake vegan desserts (which my husband gobbles up) but there are some desserts – namely, brownies – where nuts are an issue. Brownie lovers are usually divided into two lots: the purist (my husband) who likes his brownies with nothing added, and the adventurer (me) who loves walnuts or pecans and a few extra dark chocolate chips sprinkled throughout (just to make sure the brownies are gooey enough). So, when he’s not home, making a pan of walnut studded brownies (instead of half plain, half nuts) is on my to-do list. Read more »

The American Diabetes Association versus Prediabetes and Type 2 Diabetes

We envision a life free of diabetes and all its burdens, which is fueled by our mission to prevent and cure diabetes and to improve the lives of al people affected by diabetes.                                                    ~American Diabetes Association

The American Diabetes Association (ADA) works to “prevent and cure diabetes and to improve the lives of all people affected by diabetes.” The organization does this by education, advocacy, and providing grants for research.

Approximately 30 million Americans have diabetes with the majority (an estimated 29 million according to the ADA) suffering from Type 2. An additional estimated 84 million Americans 18 and older are prediabetic.  In other words, 113 million people or 1 in 3 people in the United States suffer from prediabetes or diabetes. Read more »

Where Does $100 to the American Diabetes Association Go?

The American Diabetes Association (ADA) reported the receipt of $181 million in revenue in 2015, which primarily came from 5 sources:

  • $135 million (75% of revenue):  Contributions, Gifts, and Grants
  • $32 million (18% of revenue):  Subscriptions, Reg, Sales, and Booth Rentals
  • $5 million (3% of revenue):  Advertising
  • $5 million (3% of revenue):  Royalties
  • $4 million (2% of revenue):  Other Sources.

During the same year, the ADA reported expenses of $183 million (net of depreciation) – $2 million more than the organization took in. Because the organization had $89 million in net fund assets, they were able to cover the excess expenses. Read more »

Summer Fruit Crisp

Farmer’s markets and grocery store shelves are overflowing with fresh local produce – golden apricots, plumb blackberries, red raspberries, and the bluest of blueberries – that can be enjoyed in a variety of homemade treats. One of my favorite wow me desserts during the summer months is a Summer Fruit Crisp:  a combination of sweet, juicy apricots, blackberries, raspberries, and crisp tangy apples combined and topped with an oaty, whole wheat crunchy topping sweetened with real maple syrup and light brown sugar and spiced up with cinnamon, nutmeg, and real vanilla extract. Have You Thought About Aluminum?

For decades I never gave much thought to aluminum beyond the rolls of aluminum foil in my kitchen drawer. Then several years ago, I was reading a cookbook (Vegan Chocolate..the ultimate chocolate baking book for chocoholics available at www.amazon.com and at bookstores nationwide) by Fran Costigan that recommended using aluminum-free baking powder which made my curious as to what the difference was between baking powder with aluminum (double-acting baking powder) and aluminum-free baking powder. Angie’s BOOMCHICKAPOP® Light Kettle Corn

Kettle corn – crunchy popcorn that is both sweet and salty – is without a doubt an incredible invention but the problem with most types of kettle corn is the fat and sugar content (way too high) so kettle corn is not an everyday snack for most people. Until now. Angie’s BOOMCHICKAPOP® Light Kettle Corn is a classic lightly salted (with sea salt) popcorn with a little cane sugar thrown in. Read more »
