There’s a special place in a chocolate lover’s heart for bean-to-bar chocolate makers like Videri whose founders are committed to creating great chocolate while following the tenets of social responsibility and providing warm and friendly customer service. Truly a labor of love, the beans-to-bar operation is a fascinating process and one worth understanding to truly appreciate.
The Videri Chocolate Factory, located in Raleigh, North Carolina starts with what is referred to as “The Process” purchasing organic and fair-trade cocoa beans from Central and South America, whenever possible. The cocoa beans are roasted and then taken through the winnowing process which helps separate the nib from the husk to help ensure the chocolate isn’t bitter (too much husk causes bitterness). The cocoa nibs are then placed in stone grinders which pulverizes cocoa butter out of the cocoa nib. The ground cocoa mass and cocoa butter are transferred to a large mixer (called a conch) and blended with organic sugar. The chocolate is then tempered (heated) to give the chocolate its sheen and signature snap. The chocolate is then poured into molds or blended with other ingredients to make bars. Five types of chocolate bars are offered:
Dark Milk Chocolate: A milk chocolate bar with a dark chocolate twist obtained by adding more cocoa beans and organic whole milk. The bar for those who prefer milk chocolate over dark chocolate, with a cocoa content of 50%.
Dark Chocolate with Sea Salt: 60% cocoa with a sprinkle of sea salt for a sweet and salty flavor.
90% Ecuadorian Dark Chocolate: A dark chocolate bar made from Ecuadorian Camino Verde cocoa beans and a pinch of sugar. Winner of the 2014 Good Food Awards in the category of chocolate. The bar for chocolate connoisseurs who want a rich deep dark chocolate flavored bar.
Each bar weighs 1.5 ounces with two bars in each box for a total of 3 ounces for $7.99 – $11.99. The company also sells a 1-pound block of 70% dark baking chocolate for $48, roasted cocoa nibs (8 ounce bag for $15), and a Confections Pack: a 3 ounce box containing 6 handmade caramel and ganache in molded chocolates For $16.99.
