The 5-Minute Super (Healthy) Sandwich

Grabbing an energy bar for a late morning or afternoon snack beats the hunger blues but for a tasty change, consider the 5-Minute Super (Healthy) Sandwich. Packed with nutrients and fiber, this easy-to-make sandwich is a feast for the senses: colorful, delicious, and a handful.

Creamy avocado with sun-ripened fresh tomato slices along with crunchy sprouts give this big fat sandwich a variety of flavors and textures that make it one very satisfying snack. When I served this sandwich to a friend, he stared at it, said that he felt like he was in California where “everyone” eats healthy, and then gobbled it up. It’s that good.

Start with two slices of whole grain bread, fresh or toasted. Spread slices of fresh green avocado (or mashed) on one side of the bread. Sprinkle with a touch of salt. Add sliced tomatoes and a small handful of sprouts (i.e. alfalfa, broccoli, spicy radish, etc). Place the other piece of bread on top. Slice in half. Serve. Enjoy. That’s it.5-Minute_Super_Sandwich

The 5-Minute Super (Healthy) Sandwich


  • 2 pieces of whole grain bread (fresh or toasted)
  • 1/4 to 1/2 of a Haas avocado, sliced
  • 2-3 slices of tomato or 4 sweet cherry tomatoes sliced in half
  • Small handful of sprouts

For added flavor, consider spreading Just Mayo on one or both sides of the bread.
