Chunky Broccoli Soup (Non-Dairy)

Traditional broccoli soup contains milk or cream but this creamy, delicious version replaces the dairy with unsweetened macadamia milk  (“Milkadamia”) so you can enjoy all the richness without the dairy in a soup that looks like a chowder.

The base of the soup is made with low sodium vegetable broth and a 5 ounce packet of Frontier Soups Broccoli Cheddar Soup Mix, which contains brown rice, potatoes, broccoli, carrots, onion, curry, yellow pepper, and spices. Note: the mix contains the word cheddar because the directions suggest adding cheddar cheese but no cheese is needed. The non-dairy milk adds the richness and a fresh bowl of chopped steamed broccoli turns the soup into a thick delicious vegetable filled meal in minutes. Read more »

Living in the Moment

It seems that every time I turn around, someone is trying to sell me a new way to stay connected or to connect some aspect of my life to technology and I’m not having it. Blame it on my age (baby boomers are reluctant followers) or simply stubbornness, but living in the moment means I interact with friends and family without having to pull out my i-phone to take a selfie and post it on social media so everyone can see what a great time I’m having with the other beautiful people in my life. These moments really are more meaningful – happy or sad – than any photo reveals because I’m living them. Read more »

FIKA Hazelnut Spread

FIKA Hazelnut Spread is the ultimate sweetened hazelnut chocolate spread made with six ingredients:  hazelnuts, hazelnut oil, confectionary sugar, Tahitian vanilla, cocoa powder, and salt.  Unlike Nutella (made with sugar, palm oil, hazelnuts, cocoa, skim milk, reduced minerals whey (milk), lecithin an emulsifier (soy), and vanillin: an artificial flavor), FIKA Hazelnut Spread primarily relies on hazelnuts for the rich, nutty flavor of this specialty nut butter. What is a TigerNut?

If you’ve ever traveled to Spain, then you’ve more than likely seen “Horchata de Chufa” on a beverage menu, especially in the summer months when this refreshing drink is very popular. A sweet, creamy, milk-like beverage, horchata de chufa is traditionally made with ground tiger nuts blended with ice-cold water and sugar. The word “chufa” is spanish for the tubers of the nut sedge plant, which is another name for the tigernut (which is also spelled “tiger nut”). Read more »
