KIND Bars

In 2003, Daniel Lubetzky, an entrepreneur launched KIND – a healthy snack company based on two principles: the word “and” meaning that his snacks would be tasty and healthy; and “kindness” with reference to treating your body, taste buds, and the world with unexpected kindness.  Most health bars lack taste and texture which I can attest to as I’ve tried just about every bar on the market and most were one-time purchases so as the years passed, my expectations for any kind of healthy snack bar that tasted exceptional diminished until I discovered KIND bars.  Not only are KIND bars convenient and wholesome, but they are healthy and tasty – an unexpected coupling as these two descriptions don’t often go together. The only caveat:  the consumer needs to be a nut-lover to enjoy these bars because the main ingredient of each variety bar is some type of nut. Vigilant Eats makes a unique product:  Organic Superfood Cereal – a gluten-free dry cereal that contains no dairy, soy, refined sugar, additives or preservatives.  Organic Superfood Cereal does contain oats, oat flour, goji berries, cacao nibs, hemp flour, coconut palm sugar, yacon (a sweet tasting root plant) powder, maple powder, and cinnamon.  Sold in 3 ounce cups (with a small foldable spoon on the inside), Superfood is, for lack of a better word super convenient. Just add cold water or milk and stir and you have a high-protein, low-glycemic, nutrient dense cereal that tastes terrific. 479 Popcorn is a premium artisan popcorn hand-made and air-popped in San Francisco, California.  The company was founded by Jean Arnold whose love of popcorn began in her childhood when her mother used to make fresh popcorn in a hand-cranked stove-top popper. Jean grew up and attended Le Cordon Bleu in London before venturing out on her own in the organic popcorn business. Gagne’s Blueberry Petite Pie

When I think about Maine, I am reminded of rocky beaches, the cold salty ocean, lighthouses, lobster, and blueberries. In fact, the wild blueberry is the official fruit of Maine and is as much a symbol of the state as the lobster or the lighthouse.

Some people like to say the beacon in the lighthouse and the promise of lobster bring tourists to Maine but the possibility of eating deep blue pea-sized wild blueberries bursting with sweetness is also a draw. So, it’s no surprise that Gagne Foods of Bath, Maine combines their skill at pastry – the company’s 24-layer cream cheese biscuits are award winners – with wild blueberries to produce one amazing Blueberry Petite Pie that is also referred to as a Blueberry Turnover. I Heart Keenwah

Quinoa (pronounced as Keenwah) is a grain-like crop whose edible seeds are being touted as a superfood: the only “grain” that is a complete protein source with all nine amino acids. In recent years, quinoa has grown in popularity as an alternative food for those on gluten-free diets and for those who want a crop with a high protein content (18%).  High in carbohydrates and a good source of dietary fiber, quinoa has a light fluffy texture and a slightly nutty flavor when cooked but is crunchy and nutty when baked with a sweetener. Effie’s Oatcakes

Years ago, while traveling through England, I discovered oatcakes, a British treat that is a cross between a cookie and a cracker.  Not as sweet as a typical American cookie (which the Brits call biscuits) and not as thin as a cracker, the oatcake is a crunchy thick wafer made primarily of flour, oats, butter, sugar, and salt.  The “cake” has a slight sweetness with a buttery taste that is delicious plain or with cheese. Blueberry Buckle Streusel Cake

Up until a few years ago, blueberries were only available in late summer. To take advantage of the bountiful supply, August menus were filled with blueberry laced recipes: muffins, pancakes, cake, pie, cobbler, and buckle. No one ever got tired of blueberries but just as quickly as the blueberries arrived and just as we were able to fully appreciate how incredible these special berries taste, they would disappear and we would have to wait a year to see them again. Holiday Mail Order Sweets
