DeLallo Roasted Red Pepper Bruschetta

Bruschetta (pronounced “bru sketta”) is an Italian appetizer made with toasted or grilled bread brushed with bit of olive oil, salt (and often garlic) and then topped with chopped tomatoes mixed with onions and basil or chopped roasted red peppers mixed with herbs and spices, or beans and more. Where Does $1 to 4-H go?

Most people know 4-H is a youth development organization but some may not know the national 4-H is administered by the National Institute of Food (NIFA) under the US Department of Agriculture (USDA) – federal government offices.

The national organization is also known as the National 4-H Council which overseas and assists the 3,000 local offices and 110 land-grant universities – universities granted federal land to focus teachings on agriculture, science, and engineering – to administer the organization’s programs. 4-H operates at the state and county level in the United States and although these offices operate independently as separate non-profits, they collectively administer 4-H programs. Starburst vs Lovely Fruit Chews

At a recent theater show during intermission, the refreshment stand had a stack of Starburst – the square-shaped fruit flavored soft chewy taffy-like candy – sitting on the counter. Although tempted to purchase a stick of this childhood favorite, one look at the ingredients list made me change my mind and wish there was an alternative.

My search led to the Lovely Candy Company which makes Lovely Fruit Chews – square-shaped fruit flavored soft chewy taffy-like candy made with real fruit and no corn syrup, gelatin (from animal bones), artificial flavors or colors. Read more »

“The Emerald Light In The Air”

I’m not of this world.

The Emerald Light In The Air is a collection of short stories written by Donald Antrim that were originally published in the New Yorker Magazine. If you’ve never read Antrim’s work before (and, even if you have), it’s helpful to know a few things about him because his stories often mirror parts of his life.

Born in 1958, Antrim was raised in the south by an alcoholic seamstress mother and a father (a scholar of TS Eliot) who married and divorced twice. Moved from place to place, Antrim’s childhood was anything but idealic although boarding school and college (he graduated from Brown) paved the way to a writing career. Read more »

Asian Salad with Ginger Soy Vinaigrette

The Farmer’s Table restaurant  in Boca Raton, Florida serves a Mandarin Chopped Salad with Ginger Soy Vinaigrette that is remarkable for its flavor, texture, and color. Filled with chopped cabbage, red bell peppers, carrots, broccoli florets, mandarin oranges, and candied cashews tossed in a Ginger Soy Vinaigrette, the Mandarin Chopped Salad is a showstopper and one of those dishes that made me wish the salad bowl was bottomless. In other words, I had to figure out how to make a version of this salad in my own kitchen. Read more »

Community Foundation for Palm Beach and Martin Counties and Giving

A community foundation is a tax-exempt, nonprofit, autonomous, publicly supported, nonsectarian philanthropic institution with a long term goal of building permanent, named component funds established by many separate donors for the broad-based charitable benefit of the residents of a defined geographic area, typically no larger than a state.

The Community Foundation for Palm Beach and Martin Counties (Community Foundation) collects and invests charitable donations, serves as a philanthropic advisor,  and is “dedicated to serving the community’s needs” by awarding grants to non-profit organizations in five areas:  arts and culture, education, environment, family, and health and wellness. PlantPure Nation

PlantPure Nation is a 96-minute documentary film recently released (2015) that tells the story of how scientists, doctors, researchers, and other supporters are working to spread the word of the health benefits of a whole food plant-based diet.

Twelve years ago, T. Colin Campbell, an American biochemist and Professor Emeritus of Nutritional Biochemistry at Cornell University, published The China Study, a book that examines the relationship between the consumption of animal products (including dairy) and chronic diseases – heart disease, hypertension, diabetes, prostate cancer, breast cancer, and colon cancer.  Read more »

New England Corn Chowder (Vegan)

A large bowl of hot soup is hard to beat on a cold dreary day. Providing warmth and satisfaction, soup nourishes our senses in so many ways. The aroma draws us to the table while our eyes are seduced by the steam drifting up above the bowl. And, then there is the flavor and texture: usually a combination of earthy vegetables that come together in a broth that can be enjoyed in its simplicity.
