The Hardest Part of Living Vegan – Imperfection

For most people becoming vegan or plant-based is a journey and not a switch that was turned on one day. In fact, I don’t know anyone who was a carnivore one day and a vegan the next. The change is really an evolution which occurs over time. Very often, as was with me, a person becomes vegetarian because of a nutritional concern and then learns about the animal livestock and dairy industries and gradually cuts out dairy products out of a moral, ethical, or religious belief. And, then there is the third part of the vegan triangle which is the environment because there is no doubt the animal livestock and dairy industries are destroying the environment with the CO2 emissions, contaminated water systems, and forest destruction. Remembering Faina Rapoport

Faina Rapoport was 45 years old when she died on September 11, 2001 at the World Trade Center. A computer programmer for Accenture (a global professional services company that provides consulting services in digital, technology, and operations), Rapoport worked as a consultant to Marsh & McLennan, the corporation that had offices on eight floors (93-100) of the North Tower of the World Trade Center. When American Airlines Flight 11 crashed into the North Tower between the 93rd and 99th floors, the individuals on these floors were killed, including Rapoport. Read more »

California Suncakes

Miss Marjorie’s Steel Drum Plantains

Most people know that a plantain is a member of the banana family but many Americans don’t know that plantains are starchier (like a potato) and low in sugar which makes them ideal to make into chips. Lettuce Wraps

My first experience with lettuce wraps – butter lettuce leaves offered with a wide variety of fillings and sauces – was at the Cheesecake Factory, which was an eye-opening foodie moment for me. Instead of soft tortillas, crispy green butter leaves can be used as a lighter alternative to hold raw vegetables (bean sprouts, minced scallions, carrot sticks, chopped tomatoes, diced avocado, thinly sliced cucumber or radishes) and/or cooked vegetables (sautéed mushrooms and/or onions, corn, tofu) blended with herbs (cilantro, mint, basil), and sauce (soy, teriyaki, peanut).
